We love apples around our house. We love apple pie (the one with chocolate chips is the most requested around here) apple cobbler, apple crostata, rustic apple pies, apple cake. I could go on & on.
But one of the new favorites with both grown-ups and kids alike is not dessert, but rather, a salad. So easy & so yummy!
Apple, Dried Cherry & Walnut Salad with Maple Dressing
Maple Dressing
¼ cup mayonnaise
¼ cup pure maple syrup
3 tablespoon Champagne vinegar or other white wine
2 teaspoons sugar
½ cup vegetable oil
Salad
1 5-ounce bag mixed greens (about 10 cups lightly packed)
2 Granny Smith apples, peeled, cored, cut into matchstick sized strips
½ cup dried tart cherries (or dried cranberries)
½ cup chopped walnuts, toasted
Whisk mayonnaise, maple syrup, vinegar, and sugar in medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper. Can be made up to 3 days ahead. Toss greens, apples, cherries & walnuts with dressing to coat. ENJOY!
